Puff pastry sandwich with ham and Beemster Young Belegen

Snack/lunch dish. 2 persons. Prepare 10 min. 

Ingredients

  • 4 slices of buttercream puff pastry
  • 4 slices Beemster Jong Belegen 48+ (packet 150 g)
  • 50 g Yorkham
  • ½ lemon, rinsed clean
  • 3 sprigs of curly parsley
  • 3 tbsp ketchup

Prepare

  1. Let the slices of puff pastry thaw for a few minutes, so that they are still firm but no longer frozen.
  2. Trim the cheese to fit the puff pastry. Divide half of the cheese between 2 slices of puff pastry. Leave 1 cm free along the edges. Spread the ham over the cheese and finish with the rest of the cheese. Place the other slices of puff pastry on top and firmly press the edges all around with the tines of a fork.
  3. Brown the sandwiches for 8 minutes on each side in the skillet or 12 minutes in the sandwich iron. Cut the sandwiches in half diagonally to form 2 triangles.
  4. Meanwhile, grate the zest of half the lemon and squeeze the fruit. Chop the parsley as finely as possible. Mix with the ketchup and serve with the sandwiches.
