Triangle with roast beef, Beemster 30+ Old & tomato artichoke tapenade

Lunch dish. 2 persons. Prepare 10 min.

Ingredients

  • 1 zucchini
  • 1 tsp oil
  • 200 g artichoke hearts
  • 50 g semi-dried cherry tomatoes (chilled)
  • 1 tbsp capers
  • 2 multigrain triangles
  • 50 g ricotta cheese
  • 4 slices of roast beef (cold cuts)
  • 2 slices Beemster 30+ Old

Prepare

  1. Using a cheese slicer, shave the zucchini lengthwise into 4 slices. Stir with the oil and pepper. Heat the grill pan without oil or butter and grill the zucchini for 3 min. Turn halfway through.
  2. Drain the artichokes and chop finely. Halve the dried tomatoes and mix with the artichokes, capers, ½ tsp. caper juice, pepper and salt, if desired.
  3. Cut the buns open and spread the bottom halves with the ricotta. Coat successively with the roast beef, cheese, grilled zucchini and tomato artichoke tapenade. Sprinkle with pepper, top with the top halves and serve.
