Camping pasta salad with Beemster Belegen
Main course. 4 persons. Preparation 20 min.
Ingredients
- 300 g penne
- 1 lemon (rinsed clean)
- 2 tbsp mayonnaise
- 4 tbsp pesto
- 150 g Beemster Belegen 48+
- 1 zucchini
- 400 g cherry tomatoes
- 50 g arugula
- 150 g raw ham
- 1 rusk
- 5 g flat parsley
- ½ tsp ground garlic powder
Prepare
- Cook the pasta according to the directions on the package until al dente.
- Grate the yellow zest of the lemon and squeeze 1 half. Mix 1 tbsp lemon juice with the mayonnaise and pesto to make a dressing.
- Cut the cheese and zucchini into pasta-sized strips. Cut the tomatoes in half. Coarsely cut the arugula and the ham into strips.
- Crumble the rusk and finely chop the parsley. Mix the rusk with the parsley, lemon zest and garlic powder.
- Drain the pasta and rinse cold under running water. Mix the dressing, zucchini, tomato and arugula into the pasta. Divide the ham and cheese on top. Sprinkle with a little parsley crumble and serve with the rest.
Serving tip
This dish is also ideal to take for dinner at the park, beach or anywhere else.
