Camping pasta salad with Beemster Belegen

Main course. 4 persons. Preparation 20 min.

Ingredients

  • 300 g penne
  • 1 lemon (rinsed clean)
  • 2 tbsp mayonnaise
  • 4 tbsp pesto
  • 150 g Beemster Belegen 48+
  • 1 zucchini
  • 400 g cherry tomatoes
  • 50 g arugula
  • 150 g raw ham
  • 1 rusk
  • 5 g flat parsley
  • ½ tsp ground garlic powder

Prepare

  1. Cook the pasta according to the directions on the package until al dente.
  2. Grate the yellow zest of the lemon and squeeze 1 half. Mix 1 tbsp lemon juice with the mayonnaise and pesto to make a dressing.
  3. Cut the cheese and zucchini into pasta-sized strips. Cut the tomatoes in half. Coarsely cut the arugula and the ham into strips.
  4. Crumble the rusk and finely chop the parsley. Mix the rusk with the parsley, lemon zest and garlic powder.
  5. Drain the pasta and rinse cold under running water. Mix the dressing, zucchini, tomato and arugula into the pasta. Divide the ham and cheese on top. Sprinkle with a little parsley crumble and serve with the rest.

Serving tip
This dish is also ideal to take for dinner at the park, beach or anywhere else.
