Rainbow club sandwich with Beemster Young Belegen, vegetables and an egg

Ingredients

  • 1 egg
  • 1 candy cucumber
  • 4 radishes
  • 2 slices of casino waffle bread
  • 2 tbsp mayonnaise
  • 2 slices young mature 48+
  • 2 baby romaine leaves
  • 30 g sliced red cabbage
  • 25 g carrot julienne

Prepare

  1. Boil the egg for 7 min. Scald under cold running water and peel the egg.
  2. Meanwhile, thinly slice the cucumber lengthwise and thinly slice the radish.
  3. Spread the bread with the mayonnaise. Place 1 slice in the center of a sheet of baking paper. Top with 1 slice of cheese, the lettuce, red cabbage and cucumber. Place the egg in the center of the bread and spread the carrot julienne on top. Divide the other slice of cheese and radishes on top. Place the slice of bread with the spread side down and press lightly.
  4. Wrap the bread tightly in the baking paper. Cut in half with a bread knife and serve inside the paper.
