Tortilla cake with Beemster Belegen

Main course. 6 persons. Preparation 35 min. + 30 min. oven time

Ingredients

  • 5 corn tortillas
  • 3 tbsp. sunflower oil
  • 500 g half-and-half or minced beef
  • 1 bag of bell pepper mix (3 pieces)
  • 1 onion
  • 1 red jalapeño pepper
  • 140 g tomato paste
  • 1 tsp ground cumin
  • 2 tsp smoked paprika
  • 200 g Beemster Belegen 48+
  • 150 g corn kernels
  • 3 eggs
  • 125 g crème fraîche
  • 50 g tortilla chips
  • 1 ripe avocado
  • 10 g fresh coriander
  • 4 tbsp Mexican salsa

  • springform pan (Ø 24 cm)

Prepare

  1. Preheat the oven to 175 °C. Brush the corn tortillas on both sides with a total of 2 tbsp. sunflower oil. Place them in the springform pan so that they completely cover the bottom and edges. Bake the mold with the tortillas inside for 5 min and remove from the oven.
  2. Meanwhile, heat the rest of the oil in a frying pan and fry the minced meat over high heat for 6 min until loose and golden brown. Meanwhile, remove the stem end and seeds from the bell bell pepper and cut the flesh into small pieces. Chop the onion. Pour any liquid that has been released from the minced meat out of the pan and add the onion and bell bell pepper. Fry for 5 min.
  3. Cut half of the jalapeño pepper into thin rings and finely chop the rest of the pepper. Add the chopped pepper to the minced meat, along with the tomato paste, ground cumin and smoked paprika. Fry for 2 min and season the mixture briskly with salt.
  4. Grate the cheese. Remove the pan from the heat and mix in the corn kernels and 100 g grated cheese. Beat the eggs with the crème fraîche and mix into the minced meat. Spoon the mixture into the springform pan. Bake the tortilla tart for 20 min. in the center of the oven. Remove the pie from the oven and spread the tortilla chips first and then the rest of the cheese on top. Bake for another 5 min and then take out of the oven.
  5. Halve the avocado, remove the stone, scoop out the flesh from the skin and then dice it. Coarsely chop the cilantro. Divide the avocado, Mexican salsa, cilantro and jalapeño peppers among the pie and serve the tortilla pie.
